Village Links Golf Course Makes Money But Food Service a Consistent Loser

Operating surpluses at the golf course subsidize the food service losses but the future of food service hinges on a master plan drafted by the village recreation department, which is under review by the National Golf Foundation.

The food service division at the Village Links of Glen Ellyn loses thousands of dollars each year, which is subsidized by surpluses created over time by other operations at the course. Since 2006 food service operations have lost $156,065, according to village budget information.  Although food service does not generate positive cash flow for Village Links, upgrading the restaurant and the golf course is part of the $3.9 million renovation plan crafted by the village recreation department. The plan is currently under review by the National Golf Foundation, which is scheduled to issue a report to the village board in December.  NGF was hired by the village for $18,500 to review the feasibility of the current plan. In June 2010, the …

Not bad considering these last two years in Chicago have been devastating in the golf business. The food service is only there to compliment the golf course but when you have a bad year in golf, the revenues will not cover expenses. Do not outsource the food service!! Big mistake!!!! How Do Other Municipal-Owned Courses Run Food Service Programs?

With food services at Village Links losing money, what lessons can be learned from other towns?

Part of the Village Links of Glen Ellyn $3.9 million Master Plan to renovate and update offerings at the course includes expanding food service operations, despite having lost $156,065 since 2006. Some village leaders suggested privatizing food service operations at the course, but Recreation Director Matt Pekarek does not believe that is the best plan. Pekarek maintains that golfers at the course lose out on enhanced customer service if food is handled by a third party.  “Focusing on food and beverage profitability is a detriment when you look at the overall picture of golf operations. We’re focused on the customer and providing that service, even if it’s not profitable,” Pekarek told Patch.  But how do other village-owned courses handle …

Privatization Could Be On The Table For Food Service Future at Village Links

Some village leaders think privatizing is a legitimate option, but Village Links staff disagrees.

As Glen Ellyn leaders ponder the future of the Village Links of Glen Ellyn, will privatization of food services be an option? It’s been proposed before, but met with resistance from Recreation Director Matt Pekarek who sees privatization as a detriment to the overall customer-service experience at the golf course, despite the fact that the current food services program has operated at a loss since 2006. Maximizing food service revenue is something Brad Rosley, a former recreation commissioner thinks the course should be doing. When his ideas of privatizing food services were disregarded, Rosley stepped down from his position as commissioner in 2010. Rosley also thinks the current master plan misses the objective. “The plans would make for …
