Bricks Pizza to Open 'Early October' in Downtown Wheaton

Wheaton's liquor commission will consider the restaurant's request at a meeting Thursday night. Owner Bill Wilson expects to open early next month.

Wheaton's Liquor Control Commission will consider a liquor license request Thursday for Bricks Wood Fired Pizza & Café, in downtown Wheaton.

The restaurant is requesting sell beer and wine at the 46-seat, "fast, casual" pizza joint, which is scheduled to open in early October, Bricks owner Bill Wilson said Wednesday.

Known for its wood fired brick oven pizzas ($9-$11), Bricks also serves sandwiches baked in the wood fired oven, including a signature Chicken Pesto ($7), soups, salads, some appetizers and desserts.

Wilson said Bricks in Wheaton will differ from its original store in Lombard, with gelato and craft beer on the menu.

He said Wheaton is an ideal location for the restaurant because of its vibrant downtown.

"Wheaton always has been an interest for us only because of what goes on down there—there's a lot of activity. ... I think there's a need for it down there."

He said he also has plans to open a store in Naperville this year.

Bricks has been featured on 190 North Chicago and in Chicago Magazine as a place that serves a "thin, light crust, slightly chewy and crisp around the edges," with "impeccably fresh" toppings.

He said the Bricks team is excited to be installing the restaurant's main feature—the brick oven—this week.

If the commission recommends approval at the Sept. 13 meeting, City Council would vote on the license approval Monday, Sept. 17, according to a city memo.
